I got Jallof Rice , Fried Chicken (fried in its own skin, no batter), Moi Moi and Puff Puff, with store bought macaroni salad.

sorry for the picture being so large. i really got into cooking a lot more at home lately. you will never understand how much money you save and how much more satisfying it is.

the fish is swai (some asian catfish variant), widely available in most supermarkets. i bought it frozen, let it defrost in cold water (usually comes vacuum packed). wash it to rinse off any residue. then i dry it by patting with paper towels. rub both sides with olive oil, then i coat both sides with whatever spice mix you like. i've done it with jerk seasoning, this time i did it with a tandoori spice mix (cumin, coriander and a bunch of other stuff). then i like to put a little bit more oil on both sides then coat each side with breadcrumbs (i prefer the breadcrumbs that are labeled "italian" because they come already spiced).

the vegetables are potatos cut into small cubes, whole baby carrots, cabbage, and peas. i will usually have some broccoli and green beans but not this time. basically you can use any vegetables you have handy. the key is that i dont steam them. i will heat up some olive oil, add a bit of garlic, some red pepper flakes, finely diced onions and let is simmer. then add all the vegetables and cover the pan (make sure you use a nonstick pan). then just add some salt/pepper, and make sure you are stirring every few minutes so you dont burn anything. if it is too dry you can add a little more oil. its basically roasting the vegetables. tastes sooo good. i start the vegetables way before the fish because the fish only takes a few minutes.


for the fish i use a cpl tablespoons of olive oil, make sure it gets nice and hot (but not burning). then put fish into pan. it shouldnt be a full fry, just enough oil to make the cook the surface. resist the temptation to turn too soon. use an appropriate spatula to check, but the general rule of thumb is that if the fish moves pretty easily along the pan, the side is probably cooked enough that it is crispy on the outside. then carefully tilt the pan so all the oil is on one side and then flip the fish. OR if you want you can finish the fish in the oven or a toaster oven. should only take a few minutes on each side then you're done!

good eating and when you figure out the cost this dish probably costs 2-3 dollars total.

I have made it a few times myself when I get tired of tilapia and salmon

Tonight I'm making turkey meat loaf, brown rice, and steamed broccoli
 
I really wanted to go to Gloria's but can't justify going into Brooklyn... settled for indian, so I brought home chicken jalfrezzi w/ garlic naan (flat bread) and aloo tikki (fried potato patty)
