Ingredients
- 1 package Zemas Gluten-Free Peruvian Sweet Potato Pancake & Waffle mix
- 1 egg (or egg replacer)
- 1 1/3 c. milk of choice
- 3 T. oil of choice
- 1/4 c. pure maple syrup
- 1 t. pure vanilla extract
- ¼-1/2 c. shredded coconut, toasted*
- Pre-heat waffle iron per directions on medium heat.
- Whisk together all wet ingredients.
- Add entire mix to wet ingredients and mix thoroughly.
- Spray with non-stick spray.
- Ladle ¼ c. of batter into waffle iron and cook as directed.
- Top waffles with gluten-free Cocoa-Coconut Whipped Cream recipe and toasted coconut(recipe below).
- Toast shredded coconut in a skillet over a medium heat.
- Do not walk away!
- Stir constantly until lightly browned.
