100% Extravirgin Olive Oil
2 lbs - 1 Kg Minced Meat
4 Eggplant
1 cup - 250 Tomato Sauce
1 cup - 250 g Diced Mozzarella Cheese
1/2 cup - 125 g Parmigiano Cheese
2 Chopped Cloves Garlic
Salt
Black Pepper
Directions
Cut in half lengthwise eggplant and
scoop out pulp then in a pan with extravirgin olive oil fry garlic until golden then add pulp and tomato then season with salt and black pepper then stir well and cook until golden.
In a bowl put mixture, minced meat, parmigiano and mozzarella.
Fill eggplant with mixture and bake at 180°C/360°F for 30 min.
Serve.
