LOL! I actually worked in our county jail, and this exact meatloaf was served to inmates and staff at least 3 times a week! Hilarious title. LOL!

Despite the fact you didn't use your shiv and your honesty about the balsamic sauce, the meat loaf looks incredible. Great cooking "despite the constant physical assaults"

Loved!

How do you think he knew how to make this kind of meat loaf? He had to do time for something.

Would barbecue sauce work with this?

Definitely! Although you might want to adjust some ingredients in the meatloaf. Dry adding a dry rub mixture into it!

I'm willing to bet before Chef John made it big with the culinary industry, he had to be a don in some form of organized crime! xD

There was no shrinkage, which may or may not be a good thing in prison.

I just talked to the jail...the number is 909-595-2264, and you can call and ask for the Jailer and you can ask him too...there's no Chef John in the Walnut Jail. Sir, give me a call back when you know more...know what his booking number is.

This would have a favulous deep flavor and texture if you let it set in the fridge overnight(covered of course) and reheated with the microwave to just a warm touch. I simply adore leftover meatloaf for some reason...

So do I lol I just re-heat a slice on a skillet or something and eat it BLT style, exchanging bacon for the meatloaf.

nice recipe. I make my meatballs this similarly, but if you want to make it healthier, replace half of the bread crumbs with zucchini (asian style are the best since they are not bitter). Just use food processor or dice manually finely. They give out lots of water while cooking making meatballs/loaf super juicy and a lot healthier.
