Persian Ice Cream (Bastani Sonnati)

Ingredients:
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
1 tablespoon rosewater
1 teaspoon vanilla extract
1/2 teaspoon ground saffron, dissolved in 2 tablespoons warm water
1/2 cup pistachios, chopped
1/4 teaspoon ground cardamom (optional)
Directions:
1️⃣
In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring until the sugar is completely dissolved. Do not let it boil.
2️⃣
Remove the saucepan from the heat and stir in the rosewater, vanilla extract, and saffron mixture.
3️⃣
Allow the mixture to cool to room temperature, then refrigerate for at least 2 hours or until well chilled.
4️⃣
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
5️⃣
Fold in the chopped pistachios and ground cardamom (if using).
6️⃣
Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
7️⃣
Serve the Bastani Sonnati garnished with additional pistachios if desired.
