New York Fam, how do you make a chopped cheese? Do yall make 'em at home?

There are various versions of this around the city. Grab one for a quick, greasy lunch. Eat that fucker fast tho cause they're disgusting when they get cold.

But if you want to skip lunch altogether, in an italian neighborhood, get yourself a potato and egg hero. Maaaaan, on some fresh bread?
 
True but think about it like this, you and I are New Orleans natives and I'm sure you kept French bread around, regularly or semi-regularly. Either you were making a po-boy or some sort or that shit was going stale and you made lost bread or you tossed it.

After the transplant described what a chop cheese was, I figured that's something else we could put on the French bread for something quick to eat, that's situated better on the bread than a solid patty.

Exactly this. Also why I fuck with Haiji’s cause they use French baguette for their hero’s. Other places use Kaiser rolls or that whack ass sub bread from carryouts, which don’t hit the same for me. Sandwich that good, needs that crunch.

Last time I was in NO, I had a Po-Boy from this spot in the back of some seedy ass looking bodega and this Cajun dude was sweating bullets back there cooking that shit up, but when he wrapped that shit up in that French bread, I knew I was inna good space.

That and I was high as a kite at 3am.
 
What adobo do you recommend?

To be honest any adobo will do. But if you looking to go with the most accepted flavor go with the Goya brand. It's the most popular

 
Lol like I said if you ate an og haji chop cheese from the 90s it was lawry salt and adobo.. lawry salt on the onions , Lawry salt on the burgers, the onions get sliced in the same shit they slice the cold cuts in.. if your onions ain’t got that circular cut you ain’t had a real chop cheese.. if you don’t eat chips with your chop cheese you ain’t had a real chop cheese… like I say there’s the og/ native version and there’s the transplant/ new nig chop cheese.. ya nigs eating the transplant/ new nig chop cheese.. og got wrapped in that white paper with the $2.60 price on it, with the chop cheese juice seeping through the paper.. that’s another thing if you don’t got the chop cheese juice it ain’t a chop cheese… shout-out to the og tone and the other two eventual og cooks Carlos r.I.p and Frankie the mexican
 
By the way they sell other heroes in there to.. chopcheese was originally for the kids.. but they was known for their steak and cheese heroes and roast beef heroes.. the old school steak was wrapped in this big ass red paper roll, they would unwrap it to peel off a big piece of steak… them steak and cheese sandwiches were legendary to and their roast beef, roast pork, etc.. boars head line was crazy… that’s when the store looked a whole lot diff.. they gentrified it uhhh upgrade it yrs ago to make it look more pale skin friendly

Hold on gonna disagree with the kaiser roll. Sometimes a full sized chopped cheese is way too much, especially late night. Kaiser roll sized is perfect in that case. And $1 less.

You right. In those situations, the size of the Kaiser roll is more than enough. I just wish it was a different type of bread.

This looks like a Philly cheese steak, but on a slightly higher level.

I would always go with provolone and onions. Mushrooms would be good on it too, but that might be a bit too much.
 
I met a New York transplant at jury duty down here in New Orleans and he mentioned it and sounded good, once he explained that it was a sandwich and not chopped pieces of cheese. Do yall make them shits at home or get them from a corner store?

Well, I won't be fucking with it.

I'll stick to my home made version.

I figured if a true New Yorker came down here, I could get an authentic chopped cheese without having to leave the state.
