I made these Mushroom Onion Gouda Grilled Cheese sandwiches for a cozy weekend lunch, and the combination of caramelized onions, sautéed mushrooms, and melted Gouda was simply divine. Perfect comfort food for any time of the year!

Ingredients:

8 slices of sourdough bread
1 lb mushrooms, sliced
2 large onions, thinly sliced
8 slices Gouda cheese
4 tablespoons butter
2 tablespoons olive oil
Salt and pepper to taste

Directions:

In a skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook until caramelized, about 15-20 minutes, stirring occasionally.
Add the sliced mushrooms to the skillet, season with salt and pepper, and cook until the mushrooms are golden and all the liquid has evaporated, about 10 minutes.
Butter one side of each slice of bread. Place a slice of bread, butter-side down, on a clean skillet over medium heat.
On the bread, layer a slice of Gouda cheese, some of the mushroom and onion mixture, then another slice of Gouda cheese. Top with another slice of bread, butter-side up.
Cook until the bread is golden brown and the cheese begins to melt, then flip and cook the other side until browned and the cheese is fully melted.
Repeat with the remaining sandwiches.
