Ingredients

1 chopped Scotch bonnet
chopped spring onions
1 Tbsp Pimento seeds
2 Tsp Fresh Thyme
4 Tbsp Jerk seasoning (Paste)
1 Tsp chicken seasoning
2 Tbsp Jerk bbq sauce
1 Tbsp Ketchup or sweet chilli

Process

Slit chicken with knife

1 chopped Scotch bonnet 1/2 for milde option

Cup of chopped spring onions

1 Tsp Chopped Pimento seeds

2 Tsp Fresh Thyme

4 Tbsp Jerk seasoning (Paste )

Mix together

1 Tsp chicken seasoning

1 Tsp Jerk seasoning

Mix together

Massage seasoning into chicken and slits

Marinate chicken in fridge for upto 8 hours

Then cook for 45 mins in oven 180 degrees

Making Jerk sauce

1 Tbsp of Seasoning mix in pot on medium heat

2 Tbsp Jerk bbq sauce

Add 1/2 Cup of water then mix

Add Tbsp of Ketchup or sweet chilli to mild down
