Fucking Sweet Potatoes and Brown Rice

I can't cook either for SHIT. Sweet potatoes excellent complex carb, but I tried several times trying to make sweet potato fries and just slicing them into 1/4 inch round pieces and putting them on the grill. They don't come out right no matter how I try. When I tried grilling them they were kinda hard, not the mushy texture I imaged, and when I try to make fries they are no were near crispy like they are at this restaurant I have them at.

As for brown rice, I follow the instructions down to the letter but it still comes out gummy as tasteless.

Now my mom makes a mean sweet potato but she covers them in sugar, granted this isnt the healthiest way to prepare them but the texture is amazing, the fork just glides through them and they are savory. I want to get the same texture but without all the sugar..same for the rice I want tasty fluffy brown rice, can anyone help me out? I really want to incorporate these guys into my diet.

I feel your pain cuz the way I like sweet potatos is sinful. But you can try boiling them whole and then mashing them with honey to sweeten them a little more. Some nutmeg for smell and a little butter.

Good luck on the brown rice because that stuff is terrible to me.
 
Man just bake the sweet potatoes in the oven in the skin for like an hour @ 400 til you see the carmelized sugars running out. Make sure and stab them with a fork first so they don't explode.

If you want to make sweet potato "fries" I would recommend blanching them in boiling salted water for 5 to 10 minutes not so they are mushy but just a little soft. Cut them how you want first. Then dry them well and toss them in a lil olive oil and put them on baking sheet in oven.

For the grill, use same method. Thick slices work best on the grill. Blanch them a while then dry and brush with olive oil and grill.

As for the brown rice, I only eat brown rice and have NEVER had good results with the kind you can buy in the supermarket like Uncle Bens. I cook brown rice well and get the same mush you get. Thats because its parboiled or whatever. Go to the health food store and buy Lundberg brown rice. Here is my recipe:

1 cup dry brown rice
2 cups water or broth or combo
1/2 t salt
1/2 t black pepper
3 whole cloves garlic smashed
few sprigs fresh thyme
bay leaf
7 allspice berries
1 whole scotch bonnet pepper stabbed with fork

bring water or broth and seasonings to a boil. stir in rice. bring back up to a boil. cover and lower heat. simmer for exactly 50 minutes. turn off heat and let sit covered for 10 minutes more. Uncover, remove thyme sticks and allspice berries and bay leaf and hot pepper if using and fluff with fork. Perfect tasty rice every time.
 
I stab em with a fork a few times then pop em in the microwave for about 7-8 mins.

When it's done I put a slice in it and dig in with a fork.

Brown rice.....I don't follow the recommended water amount. My ish comes out mushy so

2 cups of water for 1 cup of brown rice = :smh:

1.5 cups of water for 1 cups brown rice = :yes:

And I also agree with going to the health foods store.

I go to the bulk foods section of Wild Oats/Whole Foods Market and get the long grain brown rice by the pound.

I don't do sweet potatoes so I'm not the one there.....
 
I know what you saying you trying to get that steak fried sweet potato slices....

I guess you may have to buy a deep fryer if you dont have one already....

as far as brown rice, I let it soak for a few minutes, they I season my shyt with a little brown sugar, cinnamon, garlic sea salt and some other shyt.... brown rice anyother way is pretty tasteless...

I usually make a lot, and when I re-heat it, I stir fry it in extra virgin olive oil and onions. just a couple of spoonfuls of oil you dont want no soggy greasy ass rice...

I love sweet potato but I have to put a lil butter with it....

I know how your mom do, she be candying them shyts up huh.....

When it comes to sweet potatoes, I just bake them like regular potatoes and them sprinkle cinnamon and honey on them.:yes:

But I love rice. Always have. My mom used to say I was Chinese.:lol: When it comes to brown rice, don't boil it in water, as the water will take the flavor right out of it. Boil it in vegetable (or chicken/beef) broth. That will add some flavor to it.

Good advice here and consider the kind of brown rice you buy.
Brown Jasmine Rice is fluffy, long grain is fluffy, short grain is more nutty and chewy, sweet brown rice is very sticky, and you can even get brown sushi rice (again very sticky).

Try the brown jasmine. :yes:
 
Cooking rice is all about faith and confidence. The trick is do NOT lift the cover off to "check" it.

As for the potatoes. Fries are not good for you. Bake them suckers.

Yep. Whole potatoes and sweet potatoes are some of the things where a microwave produces results superior to conventional cooking.
 
Wrap those sweet potatoes in aluminum foil and bake them. You don't have to punch holes or add a bunch of junk to them. Cook them this way once and you'll never try another method.
