Well, Abbey Road was really their last "recorded" album (and a lush masterpiece). The back-to-basics Let It Be was recorded before but released after.

I would focus more on the early, classic singles-heavy albums, with all of their great R&B and Soul covers, along with the excellent Rubber Soul which was their first really mature album and the beginning of their transition to more complex songwriters and recording artists, without sacrificing their infectious pop spirit.
