Ingredients:
6 hard-boiled eggs, peeled and chopped
1/4 cup mayonnaise
1 tsp yellow mustard
1/4 tsp salt
1/4 tsp black pepper
8 slices bread
4 leaves lettuce
Instructions:
In a medium bowl, mix the chopped eggs, mayonnaise, mustard, salt, and pepper until well combined.
Lay out the bread slices. Place a lettuce leaf on four of the slices.
Spoon the egg salad mixture onto the lettuce.
Top with the remaining bread slices and cut in half to serve.

Ingredients:
8 oz cream cheese, softened
1 tbsp fresh dill, chopped
1 tsp lemon juice
1 cucumber, thinly sliced
12 slices white bread, crusts removed
Salt to taste
Instructions:
In a small bowl, stir together the softened cream cheese, dill, lemon juice, and salt.
Spread the cream cheese mixture evenly over one side of each bread slice.
Layer cucumber slices over half of the bread slices.
Top with the remaining bread, cream cheese side down. Cut diagonally into triangles.

Ingredients:
8 slices rye bread
1/2 cup Thousand Island dressing
8 slices Swiss cheese
8 slices cooked corned beef
1 cup sauerkraut, drained
4 tbsp butter, softened
Instructions:
Butter one side of each slice of bread. Place 4 slices, butter-side down, in a large skillet.
Spread Thousand Island dressing on the side facing up.
Layer with one slice of Swiss cheese, corned beef, sauerkraut, and a second slice of Swiss cheese. Top with remaining bread, butter-side up.
Cook over medium heat for 3-5 minutes per side until bread is golden brown and cheese is melted.

2 (5 oz) cans tuna, drained
1/3 cup mayonnaise
2 tbsp sweet pickle relish
1 stalk celery, finely chopped
1/4 tsp black pepper
8 slices bread (toasted if desired)
4 leaves lettuce
Instructions:

Add the mayonnaise, relish, celery, and pepper. Mix until smooth.
Spread the tuna salad onto four slices of bread.

1/4 cup red onion, finely chopped
Salt and pepper to taste
8 slices whole wheat bread
Instructions:
In a bowl, combine the shredded chicken, mashed avocado, mayonnaise, lime juice, and red onion.
Season with salt and pepper to taste. Stir until creamy and mixed well.
Spread the mixture generously onto four slices of bread.

Arrange the thick tomato slices on two of the bread slices.
Season the tomatoes liberally with salt and black pepper.
