Americans are spending a pile of dough eating out: U.S. restaurant industry sales are expected to hit a record high this year of $863 billion, which is up 3.6% from last year, according to 2019 data from the National Restaurant Association. And nearly two-thirds of Americans has gone out to a restaurant within the past week, according to Gallup data.

So when MarketWatch found a recent thread on Reddit asking chefs to share red flags to watch for when dining out — things that might signal that a restaurant isn’t clean, or the food isn’t very good or fresh — we decided it was worth asking chefs ourselves and highlighting some of the better findings on that thread. Here’s what we found.

Look at the door handles of the refrigeration units if you can, says Victor Cardamone, owner of restaurant design and consulting firm Mise Design Group — something that’s become easier to do as many restaurants have open plan designs now. “If they are dirty, or crusted with food particles, that means the staff not only does not do a thorough job of cleaning regularly, but they also do not wash their hands as frequently as they should. Refrigeration door handles are opened and closed hundreds of times through the course of a service period so if the staff are diligent about handwashing, those door handles should be as clean as the hands touching them,” he says. Another pro tip — this one from Reddit: When the menus are super dirty and never cleaned, that can mean other things in the restaurant may be dirty.

Size up the staff — especially the shoes of whoever is bussing the tables. “If their shoes are all covered in muck, that most likely came from the kitchen dishwashing area. Half of the dishwashing area isn’t the cleanest for obvious reasons, but if they are maintaining an orderly area, which helps to prevent cross contamination, then there shouldn’t be food hitting the floor for the staff to walk through,” says Cardamone.

And that’s not the only thing to look for. “If you walk into a restaurant and the host is bored and inattentive, assume your service will be poor,” says Yankel Polak, head chef at ButcherBox. Furthermore, there are times when restaurants send a server to greet you at the entrance and then assist you to your table. “It is important to observe to see if they are, if not the best groomed, groomed enough,” says Firoz Thanawalla, chef and owner of Chef’s Satchel. “This is the first pointer to know if the restaurant follows minimum standards of their staff being well groomed and kind to greet the guest and assisting them to the table. If you notice a server who does not greet or is busy on her phone while you’re waiting, that might just be a sign of certain standards of the restaurant.”

Use the salad as a barometer for restaurant quality. “If the lettuce is wilted or there’s too much white base and not enough green leaf, the restaurant’s taking shortcuts. Sometimes the salads are pre-made in bowls, wrapped and refrigerated until ordered. If your salad looks like it’s been pressed into that bowl and stored, rather than freshly tossed and plated, that’s another sign of a shortcut,” restaurant and hospitality coach Leslie Kalk tells MarketWatch. “On the other hand, if your salad is crisp, freshly tossed and well-presented, it’s a sign that everything on the menu is probably taken very seriously by that establishment.”

Ask questions. “Ask where your oysters come from. If they don’t know, you don’t want them. Works for most seafood.” This tip came from the Reddit thread, and other chefs seconded the notion that knowledgeable staff was a sign about restaurant quality -- and not just concerning seafood. One also wrote: “The more the server knows about the ingredients in the food, it shows kind of like a badge of pride for the kitchen in a way. They take pride in what they do and they’re taking every step to make sure this is communicated. It’s a very very good sign.”

I went into this restaurant many times but never looked up into the ceiling in the cooking area until something said look up... ceiling tile stain.. and a couple of tiles missing never been back since.
 
A friend who was a food supplier for restaurants told me not to order seafood from steakhouses and vice versa.
They cut corners in the worst way for menu items that are least likely to sell.

Oh, I hear ya!! While at work one day, we got a call this restaurant was having electrical issues. When we got there the bldg was half out and we went in the basement with flashlights. We walk into the kitchen and flashed the light on the wall and it was damn near covered with roaches. After seeing that, I never ate at that restaurant or any restaurant, I dont care how good people claim the food is!!

I have been very sceptical of all the places i eat at now... something out of place.. nope im out... hell my neighbor told me about this place in our china town? He said it literally had cats hanging in the basement... only because he delivers ice is why he was asked to go down there... im like damn...
 
I never eat Chinese food. A number of years ago 14 restaurants were closed in Chinatown Chicago by the Health Inspector at the same time. Local Fox news went in with cameras and exposed meat hanging in rooms instead of freezers and rat shit caked on the floor underneath the tables. Seen more Asian places closed down than any other around this City including a popular Thai place and a Japanese Fusion place both of which ive eaten at before . For me to eat out now is super rare. We had to become better cooks ourselves and copy recipes that we liked from restaurants.. Thank God for internet.

Worked in food service a couple of times growing up. If a place employs teenagers, I definitely wont eat there.... Anyone can be nasty but 16 year olds dont know what health standards are and dont care. The late night pizza crew I worked with for a month did some despicable shit with the manager being the leader of it. I'll refrain from going any further to respect people who like to eat out.
 
Reason #2, why I hate eating at these restaurants.. Reason #1, if one restaurant has a pest problem, they all have pest problems!! Just because you dont see them(pest), doesnt mean they are not there!! Good thread

Real talk... pest-mice or rats, are in every restaurant. There is no way to get rid of them. The biggest paradox in restaurant kitchens are floors designed to keep people from slipping are the same floors that hold food particles in them. Osha says the floor has to be no slip. It’s like trying to clean those old popcorn ceilings.
 
LOL...Reminds me of this Puerto Rican restaurant we went to in Miami. There was a roach running around the restaurant. The server came, quickly stepped on the roach and looked around to see if someone was looking at him.

One thing about those cats, they will never serve them to you. They consider cats a delicacy saved for themselves only.
 
Never eat from a chinese restaurant

Only Asian food but I fucks with is Panda Express which is Americanized Chinese food plus u could see their kitchen working area from where u ordering at
 
They forgot the number one rule over all of that shit and that is: the motherfucking bathroom. Yes. I said it. The shitter. If it's filthy, piss smelling and fucking nasty I'm out son.

Edit. Reason is how can you sanitize when the spot that is supposed to be for that is unclean too. So basically they washing their hands outside or with hand sanitizer and shit. Bacteria. In your belly:mad:
